Guacamole is the ultimate Mexican side. I like mine straight up with no tomatoes but you can throw them into the recipe if you want. Also, I like a slightly chunky consistency as aposed to a completely smooth texture. Make sure the avocados are ripe too because the flavor and mashing with suffer if they are too hard coming home from the store.
4 Ripe Avocados
1 Clove Garlic, Diced
½ small Onion, Diced
A Handful of Fresh Chopped Cilantro
Juice of 1/2 a Lime
Chopped Tomato (Very Optional)
In a large bowl combine all ingredients and mash to desired consistency. Season with salt and pepper to taste. Serve immediately with tortilla chips, nachos, tacos, burritos, quesadillas, whatever.
