Pig: It’s What’s For Dinner

I often like to ask people if they had to eat one protein for the rest of their life what would it be? With so many tasty animals in the world to consume it is a tough call but when you do the math, there is really only one logical choice.

The pig is probably the one animal I would never get tired of eating. Off the top of my head we have bacon, baked ham, baby back ribs, sauage, pork loin, chops, chitlins and crispy cracklins. The other white meat presents a blank canvas for basically any flavor combination and cuisine that you could imagine. Again, off the top, favorites like pork fried rice, hickory smoked shoulder, split pea soup, rosemary and olive oil marinated and grilled center cut chops–I could go on like Bubba about his shrimp for days. The point is that steak and fish and chicken are all nice, but the almighty pig reigns supreme in my kitchen. Respect the pork.
