Spinach, Feta & Sun-Dried Tomato Orzo Salad

1/2 pound of Orzo pasta
1/2 pound fresh spinach
Handful of sun-dried tomatoes
1/4 cup olive oil
Crumbled Feta
1 clove chopped garlic
Black Pepper

Boil the orzo for about 7 minutes then strain. Put the orzo into a large serving bowl and toss with olive oil, spinach, garlic, tomatoes. Season with salt and pepper to taste. Sprinkle feta generously over the top and serve warm or chill it in the fridge for at least an hour and serve cold. The perfect summer salad.
