Diesel Pumpkin Cookies

I forget where I got this recipe but I didn’t come up with it so I can’t take any credit. Regardless, October means pumpkins and all of my favorite fall flavors — cinnamon, nutmeg, brown sugar, root vegetables. These cookies are a great combination and more portable than pumpkin pie. Do it big.

1 Cup Canned Pumpkin
1 Cup Sugar
1/2 Cup Vegetable Oil
1 Egg
2 Cups Flour
2 tsp. Baking Powder
1 tsp. cinnamon
1 tsp. Baking Soda
1 tsp. Milk
1 tsp. Vanilla
1/2 tsp. Salt
1 Cup Semi-Sweet Chocolate Chips
1/2 Cup Nuts (Very Optional)

Combine first four ingredients. Add the remaining ingredients except for the chocolate (and nuts). Mix together, then add chocolate. Drop by teaspoon onto a greased cookie sheet. Bake at 375 degrees in oven for 10-12 minutes.
